Broken Land Sour
A twist on a vodka sour with Ketel One Botanicals Peach & Orange Blossom and topped with a prosecco air.

Method
Method
- Add all ingredients to a cocktail shaker with ice.
- Shake vigorously.
- Strain into a cold coupe glass.
- Top with prosecco air.
- Garnish with pineapple slice.
Prosecco Air
- 100ml Prosecco
- 10ml Rich Syrup (2:1)
- 45ml Verjus
- 2g Soy Lecithin
Method
- Combine all ingredients in a round container.
- Whisk together using an immersion blender until fully combined.
- Turn on an aerator and place the air stone into the foaming liquid.
- The pumping air will produce more ‘soapy’ air bubbles which can be scooped and placed on top of the drink.
- Gently scoop out and place them on your drink - a julep strainer works great for this.
