Suman
From Canada’s Dear Friend Bar, The Suman is a Fijian food inspired cocktail with banana leaf Ketel One Vodka, coconut rum and a sticky rice cordial.



Serves:
Ingredients
45ml Banana Leaf Ketel One Vodka*
15ml Coconut Rum
45ml Sticky Rice Cordial*
2 Dashes of saline solution (10:1 water to salt)
1 Soda water to top up
2 Banana leaves to garnish
Equipment
1 Collins glass
1 Shaker tins
1 Strainer
1 Ice scoop
1 Measuring jigger
method
Pour all ingredients except soda water into a shaker tin.
Add ice and shake.
Pour soda water into a Collins glass with ice and banana leaf garnish.
Strain the cocktail on top and gently stir to combine.
*Banana Leaf Ketel One Vodka:
Combine 10 g Banana Leaves and 750 ml of vodka and leave overnight.
**Sticky Rice Cordial
Add 250 g Sticky Rice and 1250 g water into a pot.
Bring to a boil and cover.
Let simmer for 30 minutes.
Strain out rice, add equal weight cane sugar.
Add 2.5% Citric Acid to total weight.
Alcohol content: 19g per serve.
