Also known as shaojiu, Baijiu is a clear Chinese liquor distilled mostly from sorghum, but it can also be made from corn, rice, wheat, and millet. Baijiu is China’s national drink with a history that spans over several thousand years. Baijiu is available in different styles, including rice, light, strong, and sauce. 

Traditionally, Baiju is drunk neat in very small glasses with food, but adventurous bartenders have devised ways to use it as a base for exceptional cocktails like the highball and the berry sour. Its unique umami flavors pair well with different ingredients for distinctive tastes.
