Ingredients

    Fresh lemon juice

  • 1.5oz

    Fresh gherkin juice

  • 2

    Bar spoons of quince jam

  • 2

    Dashes orange bitters

  • 3

    Mint leaves

  • 1dash

    Ginger beer to top up

Method

  • METHOD
    1. Pour all ingredients into a shaker except the ginger beer.
    2. Shake for 6-8 seconds until the quince jam is dissolved.
    3. Strain into the glass.
    4. Top with ginger beer.
