The Why So Serious - a mezcal highball with a difference thanks to some extra zing from fermented watermelon.

Method
METHOD
1. First, create a batch of lacto fermented watermelon for which you'll need:
- 1 Watermelon cubed
- 2% Salt
Cube the watermelon and add 2% of its weight in kosher salt. Vacuum seal and crush the melon and salt mixture into pleasant mush. Ferment for 3-4 days. Blitz in blender and fine strain. Freeze in 1L increments and thaw as needed.
2. Add 0.5oz of this mixture to the other ingredients in a tin and shake with ice.
3. Add an ice spear to a Collins glass.
4. Add the mix to your glass.
4. Garnish with a burnt orange wheel and lapsang spritz.
