Temasek Tides
The "Temasek Tides" is an exquisite gimlet cocktail with a unique Singaporean twist. It masterfully blends Gordon’s gin with the distinct flavours of kaffir lime, pandan syrup, and orange liqueur, enriched by hints of saline and sherry.

Ingredients
1Dash **Saline 10%
20ml Fresh Lime Juice
20ml *Kaffir Lime Pandan Cordial
10ml Fino Sherry
40ml Gordon's Gin
Equipment
1 Coupe/Sour Glass
1 Spear Ice
1 Ice Pick
1 Cocktail Shaker
1 FIne Strainer
1 Hawthorne Strainer
method
Temasek Tides
Add 1 dash of saline, 20ml fresh lime juice, 20ml Kaffir lime panda cordial, 10ml fino sherry and 40ml of Gordon’s gin into a shaker.
Add ice to shaker and shake all ingredients together.
Cut spear ice into ½ and add ½ spear ice into sour/coupe glass
Double strain shaken cocktail into glass
Drink and enjoy!
METHOD
*Kaffir Lime Pandan Cordial
Measure 350ml of water.
Add 10 piece of Kaffir Lime leaves and 2 pandan leaves to water and boil.
Once water is boiling, bring heat down to medium and add equal parts sugar and 150ml of fresh lime juice.
Keep over heat till sugars have dissolved fully.
Let cordial cool and add 50ml of orange liqueur to the cordial.
Total Yield : 1500ml (makes 75 portions)
METHOD
**Saline Solution
Measure 100ml of water and 10 grams of table salt
Add ingredients together and mix until salt is fully dissolved
Alcohol content: 15.6g
