Zacapa Sunset Serenade
A twist on the fruity piña colada, this rich cocktail with with coconut cream is a tropical holiday in glass. Garnish with cloud top air to elevate.

Orange juice

Method
Preparation
- Add all ingredients to cocktail shaker with ice.
- Shake vigorously.
- Double strain over ice in a collins glass.
- Top with cloud top air.
- Garnish with pineapple.

125ml Coconut water
75ml Pineapple juice
75ml Lime juice
3g Sucrose ester
3g Salt
METHOD
- Combine all ingredients in a round container.
- Whisk together using the immersion blender. This will start the foaming process.
- Gently scoop out the bubbles out and place them on your drink - a julep strainer works great for this.
